As a vegetarian, when I think of Chinese cuisine, only a few options like noodles, vegetable fried rice, chili potato, and vegetable Manchurian come to mind. It feels like there aren't many other choices available. To address this issue, and because my wife is a strict vegetarian, I've created a range of new recipes using ingredients like ladyfinger, lotus stem, raw banana, yam, jackfruit, cauliflower, colocasia, and brinjal.
